The only spell that Odin teaches is Meteor, and you can get that later on in the game from Crusader anyway, so it’s a moot point as to whether or not you want to spend time having everyone learn Meteor before you turn Odin into Raiden (who teaches the Quick spell by the way.).
Personally, I have one person learn Meteor from Odin, so I at least have the spell for a good portion of the game, and then I inspect the Queen’s statue in the Ancient Castle to change it to Raiden.
As an Esper, there is really not much difference between Odin and Raiden, as they both have the same kind of attack (instant kill or miss), although I seem to recall Raiden having a greater chance of causing instant death compared to Odin. So, I guess it’s really a personal choice.
Ah, true again. I don�t remember whether I changed Odin into Raiden or not. I guess not because the spell "Quick" belongs to the kind of spell I usually don�t use. And I am very fond of Odin for… sentimental reasons. *cough*
However I find it worth mentioning that you cannot obtain all espers at once. And that you are given to choose Ragnarok as a sword or as an esper. I think next time I will choose the weapon…
