I just need to correct you because I’m a bit of an arsehole about these things but, Slayer is Speed/Thrash Metal and Lamb of God is Metalcore.
I’m not sure if your correcting me or substituting Opeth for OTEP… But OTEP is a real band, the lead singer is a chick that sings like a dude.

And to Plains, you can’t go wrong with Pantera.
Opeth is good, but, well, I saw them live, and all they played was directionless songs that lasted for more than 10 minutes each. Although I have to admit, Reveries has got some damn good songs, I just can’t see someone going straight from Heavy Metal to Opeth, which is Progressive Metal (same category as Dream Theatre and some of Tool), with gothic vox. Just doesn’t seem like a logical leap. Don’t mean to bash Opeth, I like Reveries and Deliverance, but you gotta like budget time in to listen to their songs, lol.
I dunno. I went from Radiohead to Opeth. Maybe that’s because of the whole progressive thing, but I don’t think Opeth are that hard to get into once you’ve got past the death vocals.

whilst these are excellent choices hogan, perhaps a group like Kings Of Convenience which combines classic glam metal with high-speed thrash should be top of your list of recommendations.

Epic/Power Metal – (I take it that bands like Nightwish and Rhapsody are a given) Kamelot, Epica, Magica (No, not the album, it’s a band), Sirenia, Angra, Leaves’ Eyes, Orion Riders, Visions of Atlantis, Catharsis, Heavenly (French one), Altaria, Sonata Arctica, Edenbridge, Dragonland, Freedom Call, etc
Much of Epic/Power metal has some overlap with classical/symphonic metal. (However, a lot of times, Neo classical and symphonic metal are categorized differently, because neo-classical actually plays with classical pieces whereas symphonic metal is simply when there’s symphonic sound being used in a metal song.)
Baroque/Neo Classical Metal – Yngwie Malmsteen’s Rising Force, Paul Gilbert, Symphony X, Trans-Siberian Orchestra (I love Christmas metal ;)), Lori Linstruth, Marty Friedman, Jonas Hansson, Majestic, Michael Romeo, Vinnie Moore… (If you hear the word like ‘guitar virtuoso’, there’s a fair chance that the guitarist has or had some kind of neo classical metal career.)
Folk Metal – Skyclad (the founder of the genre), Schandmaul, Agalloch, Subway To Sally, Schattentanz, Falkenbach, Tanqery, Letzte Instanz, Mago de Oz, Korpiklaani, Adhur, etc…
Folk metal is a genre that is virtually unknown outside of Europe. Only forms of folk metal that makes it into US/Asian market are mostly cross-overed with black/death/thrash metal. But you always have the online order.
Industrial Metal – Rammstein, Eisbrecher, Megaherz, KMFDM, OOMPH!, Blut aus Nord, Die Krupps, Laibach, Ministry, Ruoska, etc… I only know the famous ones in this genre.
